She is consistently recorded as born 30 Apr 1733 in the Household records, and died at age 80 in Jan 1814. Is there some reason to think this is in error?

in all these she lives at Tassetorp, an independent address, but in the 1810-1814 HFL Tassetorp seems to be under Timbonäs.
In the 1765-1772 HFL it looks like she maybe was born at Timbonäs.
Why do you think they were married in Gunnarskog parish? I see no marriages in December 1753 in GID 488.59.74200, [Värmland, Närke och Värmland] Gunnarskog, C.3, Marriages, 1719-1755, page 24, Image 24.
But there is a marrriage 26 Dec 1753 in Gräsmark, Jon Skåresson in ???högden and maid Ellika Tohmasdotter at Timbonäs, GID 487.30.66100, [Värmland, Närke och Värmland] Gräsmark, C.2, Marriages, 1749-1787, page 252, Image 125.
It is unfotunate that there are no birth records for Gräsmark 1723-1750 (GID 487.29.43800), but everything I have seen points to a birth in Gräsmark 30 Apr 1733.
BTW, the husband is recorded as born 1720 in Träskog (Gunarskog parish?), and died 1794(?), is there reason to think he was born 1723 instead?
Although there is a Jon as birth number 30 of 1723, parents Skåre Jonsson and wife Bertha Nilsdotter of Träskog, GID 488.59.76000, [Närke och Värmland; Värmland] Gunnarskog, C.3, Births, 1719-1731, page 59, Image 42.
This could well be your Jon Skåresson.
